Cooking Veggies
Having a three-and-a-half year old who loves strong flavors but is picky about his vegetables, I'm always on the lookout for new ways to cook them . . . and hide them; what he doesn't know won't hurt him. He loves my Spinach Cheese Squares, but no way am... 
Having a three-and-a-half year old who loves strong flavors but is picky about his vegetables, I'm always on the lookout for new ways to cook them . . . and hide them; what he doesn't know won't hurt him. He loves my Spinach Cheese Squares, but no way am I telling him there's spinach in there. Luckily he loves, loves, loves salad, so when I'm not hiding the vegetables, usually I can get him to eat them that way. That being said, the food blogging community is a wonderful way to find sites dedicated to whatever you're looking for. Like bacon? There's I HEART BACON. Cupcakes more what you're after? Then 52 Cupcakes is the place to be. And when I want Veggie Inspiration, there's no shortage of sources.

1. A Veggie Venture. Alanna is the self-proclaimed Veggie Evangelist and usually my first stop. She writes about a different vegetable every day and just rounded the corner on her one-year mark. Three hundred and sixty-five different posts about veggies . . . can't beat that!
2. Farmgirl Fare recently started an offshoot to her main site with In My Kitchen Garden. She takes the vegetables from first sprout to first bite, and you get to go along for the journey.
3. Kalyn's Kitchen, although heavy on South Beach diet fare, makes a point to highlight veggie goodness, particularly with her Weekend Herb Blogging event.
4. Vegetablog has a focus on vegetables, of course, with a heart for the farmers. Anyone who titles a post Brussels Sprouts! Yum! is one to watch.
5. Veggie Way is a favorite because being from Turkey, Isil writes about vegetables and recipes with them in an entirely different feel that we would here. More power to new discoveries!
6. Vegan Lunchbox knows how to make being vegan fun for her little one, giving real glimpses into the lunchboxes she packs.
7. Susan from The Fat-Free Vegan Kitchen takes vegetables one step further, but with her food porn worthy pictures, she always entices me to start banging some pots and pans around.
8. And speaking of food porn, nothing like a good bit of veggie food porn to also get your juices flowing. Hop on over to Flickr's bounty of veggie goodness . . . a few clicks of the superbly ripe and colorful vegetable snaps there will certainly get anybody's inspiration going in a heartbeat.
9. What the Hell Does a Vegan Eat Anyway? A site featuring recipes like Smoked Tofu Mini-Pizza, Rhombi Pasta with Tomato Sauce, Tart Cherry Glazed Tofu and Bolete Mushrooms wrapped in Phyllo, you might be able to fool even the toughest of critics.
10. Last but not least - After being so good at getting all our veggies in, we have to cheat a little, and The Delicious Life is great place to do it. Whether it's her recent Carrot Muffins with Cream Cheese Filling or her Oatmeal and Raisin Filled Pancakes, they're sweets we can feel good about eating.
